Okay, we have a problem. Five stars aren't enough for this one either. 😭 I think Rebel Bunny may have officially spoiled my palate. It's getting harder to look at other matchas the same way now because you've quietly raised my standards. Not just for how matcha should taste, but for how it should make me feel. I've only had the chance to try three Rebel Bunny variants so far and somehow, I still can't rank them. Each one has found its own little place in my life for a reason. But I have to admit... Seimei might be the one I'll remember most. Like I said in my TikTok & IG review, some days call for comfort. Other days call for a matcha with a little more presence and that's exactly where Seimei comes in. This one feels richer and more indulgent than my usual cups. The aroma leans creamy and nutty, and once whisked, I get gentle green notes wrapped in a lingering sweetness. The body is incredibly smooth and velvety, with a mellow sweetness that becomes even more expressive in a latte. What I love most is how comforting yet lively it feels, rich without being heavy and smooth without losing complexity. There's this extra depth that makes every sip feel a little more satisfying, especially on days when I need an extra boost or simply want something more indulgent. It's almost like the matcha equivalent of choosing a richer dessert after dinner. And this is exactly why I've accepted that having just one favorite from Rebel Bunny is probably impossible. Every powder has its own shining personality, and somehow they all end up finding a place on my shelf. I clearly need to try everything else before I can make any serious claims. Who knows? Maybe my favorite Rebel Bunny variant is still somewhere out there, just waiting to land in my cup. What continues to amaze me is how consistent you are across everything. From the branding to the quality, there is such a clear sense of intention behind Rebel Bunny. Some brands can completely win you over with beautiful aesthetics, only to leave you wishing the product lived up to the packaging. Rebel Bunny manages to make the experience feel just as good once the package is open. And honestly, I'm starting to wonder: just how good can you get? At this point, I'm not even surprised anymore. I've learned that if it's Rebel Bunny, it's going to leave an impression. Every variant seems to have its own way of quietly rearranging my idea of what a really good cup of matcha can be. I shared these thoughts with my little matcha community too, because if I'm already this far down the rabbit hole, I might as well bring a few more people with me. 🐰 Thank you again for making something that keeps giving me new reasons to be curious. I find myself reaching for Seimei a lot lately. It's such a rich and expressive matcha. Very nutty and creamy, it has that cashew-like flavor that's smooth rather than roasted. It's slightly sweet with very little bitterness. The herbaceous note doesn't bother me at all. I actually love it. Boyfie described the flavor as something comparable to camachile or ipil-ipil. Hehe I don't know if it's just me, but the powder is slightly dense, making it take a little longer to sift, though nothing too troublesome. The quality more than makes up for it! I'm so grateful to be able to try such a rare single-cultivar matcha.

At first, I didn’t think I’d like it because of its herbaceous aroma. But after going through the tasting, I got genuinely excited to write down all my notes. It’s a unique matcha, and when I find something like this, I’m fully seated. 💚

I have one question.. how does RB make Seimei SO CREAMY?! It’s unbelievably smooth and so easy to whisk too! There’s no lingering aftertaste at all— just a smooth, refreshing, and naturally sweet tasting matcha. Honestly, this might be one of the best powders out there, I can’t believe I missed out for such a long time! And that’s just Seimei! I can’t wait to try more of RB’s offerings. So glad to be part of the cult. 💚🐰

Nutty-forward with a creamy, cashew-like body. Smooth and free of bitterness, with a soft tea-leaf character and a gently sweet fresh green note, finishing with a subtle astringency and a rounded aftertaste. LOVEEE THIS ONE! My current fav among matchas that I’ve tried.
