Is your matcha ceremonial grade?

Yes. If by “ceremonial grade” you mean exceptional.

There’s no official definition of ceremonial grade. It’s a Western marketing term anyone can use. We don’t.

Perhaps a bad idea when it comes to Google SEO but we think it’s better to instead tell you exactly where it comes from, which cultivars it contains, how it was processed, and what it’s best for. e.g., latte/mixed drinks, usucha (薄茶), or koicha (濃茶).

Where do you ship? Do you ship internationally?

Everywhere.

Why is your name Rebel Bunny 🐰?

Are you a reseller or one of those fly by night white label matcha brands?

No. We don’t buy anonymous bulk powder and repackage it.

What we do:

  • Work with farmers (growers), tea merchants, and tea masters (chashi 茶師) 
  • Have team members on the ground in Japan that support our producers locally 
  • Maintain cold storage facilities alongside Machiko-san in Yame, Fukuoka Japan

The global matcha boom has put extraordinary pressure on the supply chain. Beyond developing an operational footprint in Japan that enables us to offer amazing matcha we genuinely love, we view our key role as a supporting one to our producers, the true heroes. Our guiding principle is to operate not as an American company, but as a true local partner in Japan.

We think in decades. We fell in love with matcha long before the global craze and are building a quiet, enduring matcha brand that we hope will live on long after our own human experiences.

Alright, so how do you source your matcha?

We’ve gone deep into Japan’s matcha world, personally visiting most of the major production regions.

We’ve met everyone from trading companies and manufacturers to the real backbone of matcha: tea farmers (growers), tea merchants, and tea masters (chashi 茶師) where business is built on trust, craft, and long-term relationships.

We visit and learn what makes each producer unique, sample under different use-cases, and select our favorites to offer. The role we play in the production of each matcha is unique. Sometimes we purchase tencha and partner with a stone mill for grinding. Some tea farmers (growers) handle this through their own preferred mill, and some producers have their own facilities. We pick the option that is the most supportive for our producers and makes their work easier.  

Do you operate in Japan?

Yes.

Manae-san is based in Kagoshima. Shojiro-san is based in Yame. They’re constantly visiting tea fields and supporting our producers.

We also maintain cold storage facilities alongside Machiko-san, the only female tea merchant in Yame, whose family business is the second-oldest tea merchant in the region.

Which matcha is the best?

There isn’t one.

Taste in matcha, like wine, is personal. What one person loves, might not be another's cup of tea.

We label each matcha so you can decide for yourself:

  • Cultivar(s): the tea plant variety
  • Origin: where it was grown
  • Tasting notes: how it actually shows up in the cup

Each product page gives you the information to understand the differences, so you can explore and enjoy matcha as a spectrum, not a single “best.”

How should matcha be stored?

Matcha is extremely sensitive to air, light, heat, humidity, and surrounding aromas.

If you’ve purchased a tin, we recommend keeping your matcha sealed in its inner foil pouch and storing that pouch inside the tin between uses, in a cool, dry place. This best preserves freshness, color, and aroma.

If you prefer transferring matcha out of the pouch, use an airtight, light-blocking container—like our violet glass storage jar, which is designed specifically to protect matcha from degradation. Keep it airtight—matcha absorbs fridge odors fast. 

Once opened, try to finish it while it’s at its best as freshness fades over time.

Should I refrigerate my matcha?

Yes. We recommend refrigerating your matcha to preserve freshness, color, and aroma.

For best results, keep it sealed in its inner foil pouch and stored inside the tin, or transfer it to an airtight, light-blocking container like our violet glass jar. Both options protect matcha from air, light, and surrounding odors.

When removing matcha from the refrigerator, allow it to come fully to room temperature before opening to prevent condensation from forming inside the container.

Important: once a matcha has been opened, do not store it in the freezer. Freezing an opened pouch introduces moisture and condensation that can degrade flavor and texture.

How much caffeine is in matcha?

Matcha naturally contains caffeine, and the amount depends on how much you use.

As a general guide using our spoon:

  • 1 level spoon (~2g): ~60–70 mg
    Mild. Common coffee-shop strength and a great starting point.
  • 1 heaping spoon (~3g): ~90–105 mg
    Bold. Similar to a cup of drip coffee.
  • 2 level spoons (~4g): ~120–140 mg
    Very bold. Comparable to a latte with a double shot of espresso.

Compared to coffee, matcha often feels smoother and longer-lasting due to naturally occurring L-theanine, which moderates how caffeine is absorbed. Exact caffeine levels vary by cultivar, harvest, and preparation style.

Do you sell matcha from China or any country other than Japan?

No. Rebel Bunny only sells matcha made from 100% Japanese-grown tencha.
We don’t sell China-origin matcha and we don’t sell mixed-origin tencha blends.

Do you add anything to your matcha (dyes, chlorophyll, sweeteners, flavors)?

No. Rebel Bunny matcha is 100% Japanese Matcha. That means: no dyes, no chlorophyll, no sugar, no flavors, no fillers.

Where specifically in Japan does your matcha come from?

Matcha from each prefecture is distinct. That’s why we source from all over Japan. Currently we offer matcha from Yame, Fukuoka, Uji, Kyoto, Shizuoka, Miyazaki, and Kagoshima.

Each product page lists where the matcha comes from, which cultivars are used, and any distinct processing characteristics.
