Pure and beautifully refined, this Uji Hikari from Ujitawara, Kyoto, opens with savory notes reminiscent of wakame and pistachio, balanced by the gentle sweetness of snap peas. Once whisked, the sweetness becomes softer and rounded, while subtle floral notes gradually reveal themselves.

Remarkably balanced with virtually no bitterness or astringency, this matcha is equally suited to usucha and koicha, allowing the pure character of the cultivar to be appreciated in either preparation.

Cultivated by Tomohiro-san, Uji Hikari is one of Uji's signature tea cultivars. Selected by the Kyoto Prefectural Tea Research Institute from a native Uji tea plant for producing both tencha and gyokuro, Japan’s highest-grade shaded green tea. "Uji Hikari from Kyoto"

The aroma was absolutely divine. It was soft, sweet steamed greens with a very distinct edamame/snap pea note that immediately stood out to me. I first tried it as koicha and was surprised by how smooth it was, honestly there were virtually no bitterness or astringency, just a deep, savory umami and a thick, velvety mouthfeel. The wakame note made so much sense here too, giving it that slightly marine, almost briny depth that made the umami feel even richer. There was also a subtle creamy nuttiness underneath, almost pistachio-like, that lingered toward the finish. Very green. Very savory. Very umami. 💚

This might be the creamiest, velvety matcha I ever had. It is rich buttery and umami-forward without being too overwhelming. As a latte, the pistachio notes are the MOST prominent with a hint of saltiness, giving it a rich, savory flavor with a velvety mouthfeel. However, it’s snap peas note give it a sharp ending with a lingering sweetness. In my experience, this is best enjoyed as an usucha and as an unsweetened latte to really savor its complexity. I really enjoyed this one than I intended to, and will be savoring it til the last gram.

I will keep coming back to this matcha. It has that unmistakable Uji Hikari character I was hoping for (sweet, vegetal, and deeply umami). And what surprised me was how beautifully those flavors come together. It feels vibrant without being overwhelming, and there’s a softness to it that makes every sip feel really satisfying. I especially love how it holds its character as a latte. The soy milk rounds everything out, but the matcha still comes through clearly instead of getting lost. It makes me want to slow down and actually pay attention to what I’m drinking, rather than just reaching for another cup out of habit. And maybe that’s what I appreciate most about it. This matcha is the one that makes me appreciate why I fell in love with matcha in the first place. Rebel Bunny, you really know how to make a girl fall for matcha all over again. 🤍
