On the nose, this mulberry leaf carries a distinctive, almost pepper-like aroma. It may feel unexpected at first, but give it a moment once prepared. When wet, it quickly softens into a rounder, gently sweet aroma, reminiscent of banana. It also reveals a surprisingly thick, almost pudding-like texture. Try it in milk, and the sweetness becomes more pronounced, unfolding naturally without any added sugar, while the creamy texture turns even richer, creating a comforting dessert-like cup.
This mulberry leaf is grown in Kagoshima by Kawaji-san, where the Hayatesakari variety is carefully cultivated. Much like tea, mulberry also has a wide range of cultivars, each expressing its own character. The leaves contain naturally occurring compounds such as 1-deoxynojirimycin (DNJ), often associated with supporting balanced blood sugar levels. It is also rich in dietary fibre, iron, calcium, vitamins, and more.
Mulberry itself has been referenced in historical texts across East Asia, reflecting a long-standing relationship between the plant and daily life.
