How to store your matcha

Matcha is extremely sensitive to air, light, heat, humidity, and surrounding aromas. So, TL;DR keep it cool, dark, dry, sealed, and away from strong-smelling food.

The basics

Matcha likes it cool, dark, dry, and sealed.

Cool

Heat is not your friend. Keep matcha away from sunny counters, hot appliances, and warm cabinets.

Dark

Light dulls matcha over time. Keep it in the inner foil pouch, inside the tin, or in an airtight light-blocking jar.

Dry

Moisture is the big one. Let refrigerated matcha come fully to room temperature before opening it.

Sealed

Matcha absorbs surrounding aromas quickly, especially in the fridge. Keep it away from onions, cheese, leftovers, and anything loud.

Fridge or freezer

Yes to the fridge. No to the freezer.

For home storage, we still do not recommend freezing unless the matcha stays unopened, fully sealed, and in a stable freezer environment that avoids temperature cycling.

Whether the matcha is unopened or already in rotation, let the sealed pouch, tin, or jar come fully to room temperature before opening it. That patience helps prevent condensation from forming inside the container.

Our cold chain

But wait, Rebel Bunny keeps matcha in ultra cold storage before shipping. Why?

Because unopened, sealed inventory is different from an opened pouch in a home freezer.

Our freezers are manual defrost, which helps us avoid repeated heating and cooling cycles. That matters because temperature swings can create condensation on the outer packaging, and condensation is exactly what we are trying to avoid.

At home, the safer rule is easier: fridge before and after opening, sealed tight, room temperature before opening, and finish it while it is at its best.

Warm deliveries

If your sealed matcha gets warm in transit, it is usually okay.

A hot delivery truck or a few hours on the porch is not the same thing as storing matcha somewhere hot for weeks or months. Heat can speed up quality loss over time, but short-term warmth during normal shipping should not significantly damage a sealed pouch or tin.

When your order arrives, bring it inside, keep it sealed, and let it settle at room temperature before opening. Then put it in the fridge, even before opening. Once opened, keep storing it in the fridge between uses. Or, if you'd like to enjoy it right away, just let it settle at room temperature first.

As cute as this bunny is, we don't recommend this storage method. Storing matcha in the foil bag is the best way to preserve freshness and aroma.
